Nature Valley's gluten-free attempt!

Props to Nature Valley for trying their hand at a gluten-free product. My first thought about the Nature Valley gluten-free Almond Crunch bar, was that it seemed like a mix between a rice cake and peanut brittle...

Gluten-Free Cornbread

A Gluten-Free Corn Bread Recipe! Just in time for the Holidays! I simply adapted a corn bread recipie from the one and only Paula Dean. Instead of flour I substituted a gluten-free mix and oatmeal!
It was delicious with some chili made with ground turkey, carrots, and beans.
Usually, my first attempts at gluten-free adaptations aren't this successful! I had never made cornbread before especially not a gluten-free version. I was extremely happy with the result: a fluffy, moist, sweet cornbread. The only bad thing was that I couldn't stop eating it!!

Udi's Gluten-Free Bread

Check out my review for Udi's Gluten-Free Bread!
And don't worry, all of my product reviews won't be getting 5 stars. I just have to put my favorites up here first!

Gluten? Isn't That Like Sugar?

Gluten/Glucose- what’s the difference? Most people who follow a gluten-free diet have heard these questions many times. Whether they are out to eat at a restaurant, cooking at home with a friend, or shopping at the neighborhood grocery store, many people with Celiac Disease or a Gluten Intolerance have to deal with the general lack of knowledge about that dirty word: “Gluten”. So what is gluten exactly? Gluten is a protein found in wheat, barley, and rye and is a term that is becoming more widely known with each passing day.
